Back-To-School Dinners
I find that back-to-school is bittersweet.
We are not a family that fills our summers with camps and non-stop activities. Instead, we opt for lazy days, short holidays and a go with the flow type of routine; very different than our what our school year typically looks like.
So, while it’s lovely to recharge the batteries and let the kids have that down-time, we are ready to get back in to a routine. And thankfully my kids are not constantly at each other’s throats (don’t get me wrong, there’s still arguing) so the panic to get them behind a desk isn’t *too* real.
It always irks me when there’s a constant stream of posts that can’t wait to throw the kids back in school (oh, there has been that day or two). Kids are forced to grow up too quickly and be constantly entertained, only experiencing the notion of NOW rather than patience, self-taught entertainment, or embracing the moment.
But alas, this is not that post.
THIS is about getting your ducks in a row and coming up with some dinners that are quick, easy, and kid-friendly for those weeknights when you are running between multiple activities, juggling homework, or after a long day at the office and figuring our what the heck to make for dinner.
I love having a list of recipes that I can count on for a quick dinner one night, or something that I can throw in the slow cooker in the morning and then it’s ready to go at dinner time. I do meal plan (kind of) but of course, life happens and things come up. However; on the days I just know what’s going on, these recipes have stood the test of time.
They are organized in to categories for you in hopes of easy navigation and planning. Of course, they’re my interpretation of what I find quick & easy, etc. Hopefully, they help ease you back in to a routine and eat together as a family.
