Searing the Beef

Substitutions: Use salted butter for a more savory spread.
Serving: Spread on warm muffins, pancakes, or toast. Stir into oatmeal for nutty flavor.
Make-ahead: Can be made up to 3 days in advance. Best stored at room temperature, covered.
Pairing suggestion: Lovely with a latte, herbal tea, or poured over fresh fruit smoothies in the morning.
Leftovers: If chilled, let stand at room temperature to soften before spreading.

Sweetened Version

Add 2 Tbsp pure maple syrup to butter:
Place half the butter in a small pan over medium heat. Swirl gently until foam subsides and sediment browns deeply. Pour butter and browned bits into a shallow bowl and cool to room temperature, at least 1 hour or overnight.
Whisk the remaining softened butter in a small bowl until creamy. Gradually add the cooled brown butter and sediment, whisking until fully incorporated.
Whip in maple syrup until fluffy. Transfer to a serving bowl. Cover and store at room temperature for 2 to 3 days.

Immediately pour butter and browned bits into a shallow bowl. Let cool to room temperature, swirling occasionally, at least 1 hour or overnight.

Whisk the remaining softened butter in a small bowl by hand or with a mixer. Gradually add cooled brown butter and sediment, whisking until smooth and fully combined. Transfer to a serving bowl. Cover and store at room temperature for several days.
