Searing the Beef
Choose a dry champagne or sparkling wine for a cleaner flavour.
Replace champagne with sparkling apple juice for a non alcoholic option.
For a touch of citrus brightness, whisk a little lemon zest into the batter.
Unfrosted cupcakes freeze well for up to one month.

Heat oven to 350°F (180°C). Line a twelve cup muffin tin with paper liners.

In a medium bowl, sift together flour, baking powder, baking soda, and salt.

In a stand mixer fitted with the paddle attachment, beat butter and sugar until pale and creamy, about 2 minutes. Add eggs one at a time, mixing well after each.

In a small bowl, whisk champagne, buttermilk, and vanilla. With the mixer on low, add the dry ingredients in three parts, alternating with the liquid mixture in two parts, beginning and ending with the dry. Mix gently until smooth, scraping the bowl as needed.

Divide the batter evenly among the liners, filling each about three quarters full. Bake 15 to 20 minutes, or until a toothpick inserted in the centre comes out clean. Let rest 5 minutes in the pan before transferring to a rack.

For the syrup, heat sugar and water in a small saucepan until the sugar dissolves and the liquid is clear. Remove from heat, stir in champagne, and let cool slightly.

While cupcakes are still warm, poke a few holes in the top of each with a skewer. Brush lightly with syrup, allowing it to soak in. Cool completely before frosting.

Finish with champagne buttercream and, if you wish, a scattering of silver flakes for shimmer.
