Is it a cookie? A cake? Whatever I came up with, it is delicious and filled with chocolate. And that makes everything better, doesn't it?

Almond Flour:

Using almond flour here helps tenderize the cake and keeps it moist. If you do not have it, you can substitute with the same amount of all purpose flour, but the texture will be slightly different.

2

Doneness:

Ovens vary, so check your loaf around the 45 minute mark. When a toothpick inserted in the center comes out clean, the loaf is done.

Serving Suggestions:

This is delightful served plain, but you can elevate it with a dusting of powdered sugar or a simple chocolate glaze.

This lovely loaf blurs the lines between a simple cake and a rich, moist quick bread. The combination of all purpose flour and delicate almond flour ensures a supremely tender crumb, while the cocoa powder and chocolate chips deliver a deep, comforting chocolate flavour. It is beautiful sliced simply for a tea time treat or warmed and topped with a scoop of ice cream for dessert.

I’ll preface this by saying I’m not a chef — just someone who loves to cook and needed a place to gather and share the recipes that have shaped my kitchen.

From the classics that are always on rotation to the discoveries I’ve stumbled upon along the way, you’ll find them here. Each recipe is shared in its original form, with Anthology’s Notes added at the end to reflect the tweaks and touches that suit our table.

Over the years I’ve tried to make many recipes my own, so you’ll also see those variations woven in.

Basically: cook, taste, adjust, and repeat.
