Searing the Beef

Bring to room temperature before spreading if chilled.
Add a touch of lemon juice for brightness or a drizzle of maple syrup for warmth.
Keeps up to five days in the refrigerator in an airtight container.
For a stiffer texture, add a little more icing sugar.
Pairs beautifully with carrot cake, spice cake, or banana loaf.

In a large bowl, beat the cream cheese and butter together on medium speed until smooth and creamy.

Add icing sugar gradually, mixing on low speed until incorporated, then raise to medium speed and whip until pale and light.

Stir in vanilla and a pinch of salt. Use immediately or store covered in the refrigerator until ready to spread.
