Dairy Free Chicken Gnocchi Comfort Soup

Broth:

Add extra broth if the soup thickens as it stands.

Warm olive oil in a large pot over medium low heat. Add the shallots and cook until they soften and turn fragrant 7 to 10 minutes.

Stir in the garlic carrots and celery and cook until the vegetables begin to soften.

Add the butter and let it melt then sprinkle the flour over the vegetables. Stir for one minute.

Add the chicken italian seasoning poultry seasoning smoked paprika thyme chili flakes salt and pepper. Stir until everything is coated.

Pour in the vegetable broth. Bring to a gentle boil then cover and simmer for about 30 minutes until the chicken is tender.

Remove the chicken shred it with two forks and return it to the pot.

Add the chopped spinach cannellini beans coconut milk dairy free parmesan and gnocchi. Simmer for about 10 minutes until everything is warmed through. Add more broth if needed.

Serve warm with extra dairy free parmesan and a scattering of fresh parsley if you like.

Instructions

2 Tbsp (30ml) extra virgin olive oil

3 finely diced shallots

3 diced carrots

2 diced celery stalks

2 Tbsp (30ml) butter

2 Tbsp (10g) all purpose flour

2 boneless skinless chicken breasts or 6 thighs (230g)

1 can (540ml) cannellini beans

3 minced garlic cloves

2 tsp (10ml) italian seasoning

1 tsp (5ml) smoked paprika

1 tsp (5ml) dried thyme or 2 tsp (10ml) fresh thyme

1 tsp (5ml) dried parsley or 2 tsp (10ml) fresh parsley

1/4 tsp (1g) chili flakes

1 tsp (5ml) poultry seasoning

1 pinch sea salt

1 pinch black pepper

4 cups (1L) vegetable broth

5 cups roughly chopped baby spinach

1 can (400ml) coconut milk

1/2 cup (50g) grated dairy free parmesan

700g fresh potato gnocchi

fresh parsley for garnish optional

This velvety soup gathers soft gnocchi tender chicken and a collection of vegetables in a broth made creamy without dairy.
