Searing the Beef

Keep the lid closed while dumplings cook — steam is what makes them fluffy.
These dumplings are best served immediately with the stew they were cooked on.
You can add fresh herbs like parsley or chives for flavor.
Works with chicken stew, beef stew, or vegetarian versions.

Sift dry ingredients in bowl.

Combine milk and salad oil. Add to dry ingredients.

Stir well just until moistened.

Drop from a large spoon atop bubbling stew.

Cover tightly and bring to boil. Reduce heat and simmer 12 to 15 minutes without lifting the cover.

1 cup sifted all purpose flour

2 tsp baking powder

1/2 tsp salt

1/2 cup milk

2 Tbsp salad oil

The dumplings taste like light and fluffy clouds of comfort. They are dropped into bubbling stew and steam under a closed lid until tender and soft; simple, classic, and always delicious.
