Prepare ingredients and combine dry: Preheat oven to 325 °F (160 °C). In a large mixing bowl or the bowl of a stand mixer, whisk together the all purpose flour, white sugar, and salt.

Form the butter dough: Add the soft butter and vanilla extract to the dry ingredients and blend well. Use a spatula or mixer to combine the mixture until it forms a soft, cohesive dough.

Mix in the pecans: Add 2 cups of the minced pecans to the dough and stir gently until they are just incorporated.

Roll and coat: Roll the dough into small, evenly sized balls. Roll each ball in the remaining 1 cup of minced pecans, gently pressing the nuts into the surface to secure them.

Bake and finish: Place the prepared dough balls on ungreased cookie sheets. Bake for about 25 minutes, or until the cookies are light golden brown around the edges. Once the cookies have cooled completely, roll them generously in icing sugar before serving for a beautiful snowy finish.

½ tsp (3 g) salt

¼ cup (50 g) white sugar

2 tsp (10 ml) vanilla extract

3 cups (360 g) minced pecans (2 cups for dough and 1 cup for rolling)
