Prepare ingredients and combine dry: Preheat oven to 325 °F (160 °C). In a large mixing bowl or the bowl of a stand mixer, whisk together the all purpose flour, white sugar, and salt.

Form the butter dough: Add the soft butter and vanilla extract to the dry ingredients and blend well. Use a spatula or mixer to combine the mixture until it forms a soft, cohesive dough.

Mix in the pecans: Add 2 cups of the minced pecans to the dough and stir gently until they are just incorporated.

Roll and coat: Roll the dough into small, evenly sized balls. Roll each ball in the remaining 1 cup of minced pecans, gently pressing the nuts into the surface to secure them.
