Presentation:
Serving this dessert in individual stemmed glasses or small clear jars (such as those for yogurt) truly showcases the beautiful layering of the different chocolates.

Prepare the Cream:
Whisk 3 cups heavy cream to soft peaks. Set aside.

Dark Chocolate Layer:
Melt the dark chocolate chips over a double boiler or in a heatproof bowl set over simmering water.

In a small bowl whisk the 6 egg yolks 2 eggs and ½ cup sugar then add to the melted chocolate whisking until the mixture begins to thicken.

Remove from heat and cool for about 5 minutes.

Gently fold in two-thirds of the whipped cream.

Pipe into six glasses to form the base layer. Refrigerate while preparing the next layer.

Milk Chocolate Layer:
Warm 2 Tbsp cream and sprinkle gelatin overtop to bloom.

Melt milk chocolate as above.

Whisk egg yolks egg and sugar then whisk in the softened gelatin mixture.

Fold in one third of the whipped cream and spoon over the dark chocolate layer.

Chill uncovered for 2 hours or overnight.

Crème Anglaise:
Prepare crème anglaise. Spoon 2 to 3 Tbsp over each mousse before serving.
