Well here's a throwback if there ever was one: jello salad! Different than the typical ones from the 70's this isn't filled with creams. It's become a "must have" at holiday dinners in our house.

Molding:

If you do not have a dedicated mold, a 9x5 inch loaf pan or an 8x8 inch baking dish can be used.

Storage:

This salad keeps well covered in the refrigerator for up to 5 days.

Serving:

To unmold the Jello, briefly dip the bottom of the mold in warm water before inverting it onto a serving plate.

Dissolve the Jello powder completely in the boiling water.

Add the frozen orange juice concentrate and stir until well blended.

Add the drained mandarin oranges and the mandarin orange juice. Stir gently.

Pour the mixture into a very slightly oiled mold (if using a silicone mold oiling is not necessary).

Refrigerate overnight until fully set.

Instructions

185 g (about 2 packages) orange Jello powder

1 ½ cups (375 ml) boiling water

370 ml (about 12 ½ ounce tin) frozen Minute Maid orange juice (undiluted)

591 ml (2 x 10 ounce/284 ml jar) mandarin oranges (drained

don't throw juice away!)

⅔ cup (150 ml) mandarin orange juice
