Searing the Beef
Store the bars in an airtight container in the fridge for up to 1 week or in the freezer for up to 3 months. Serve cold for the best texture and flavour.

Lightly oil a 10×6 inch (3 L) loaf pan and line with parchment paper cut to fit the base and sides.

In a medium bowl, combine all crust ingredients, stirring until the cereal is evenly coated. Spoon into the pan, pressing down with wet hands until firm. Freeze while you prepare the filling.

Rinse the bowl, then whisk together all filling ingredients until smooth and glossy. Spread over the firm crust and return to the freezer for about 1 hour, or until set.

Melt the chocolate chips and coconut oil together in a heatproof bowl set over simmering water, stirring gently until smooth. Spread over the chilled filling and place back in the freezer for 30 minutes.

Lift the slab from the pan using the parchment handles. Warm a sharp knife under hot water, dry, and slice cleanly into bars.

1½ cups (60 g) crispy rice cereal
2½ tbsp (40 ml) brown rice syrup
2 tbsp (10 g) unsweetened cocoa powder
pinch sea salt

1 cup (250 g) creamy peanut butter
¼ cup plus 1 tbsp (70 ml) pure maple syrup
¼ cup (60 ml) melted coconut oil
1 tsp pure vanilla extract
2 pinches sea salt
Filling
¾ cup (130 g) dark chocolate chips
1 tsp (5 ml) coconut oil
