Searing the Beef

Chicken is done when internal temperature reaches 165°F.
Add onion wedges or carrots for extra flavor.
Serve with a crisp salad for a complete meal.

Preheat oven to 350°F.

Place chicken, potatoes & peppers in a shallow roasting pan in a single layer.

In a small bowl, mix oil, garlic, oregano & black pepper. Drizzle over chicken & vegetables. Sprinkle with salt & paprika.

Bake uncovered 1 hour, basting frequently.

Raise oven temperature to 400°F. Bake 15 minutes until golden brown & chicken is fully cooked.

1 frying chicken (quartered)

2 green peppers (cut into strips)

5 potatoes (peeled quartered)

1 garlic clove (crushed)

⅓ cup salad oil

1 tsp oregano

1 ½ tsp salt

¼ tsp black pepper

paprika (to taste)
