Combine apples, dates, cinnamon, ginger, nutmeg, water, and lemon juice or vinegar in a Dutch oven or large pot. Stir well.

Cover and cook over medium heat for 20 to 30 minutes, until apples and dates are soft.

Mash with a spoon or potato masher if peeled, or blend with an immersion blender if unpeeled, until smooth.

Return the pot to medium low heat and simmer for 1½ to 2 hours, stirring every 8 to 10 minutes. Begin with the lid tilted to avoid splattering, then uncover as liquid reduces.

Cook until the butter is thick, caramelized, and reduced by one third to one half. It should cling to the spoon and taste richly sweet.
