Batch Size:

This recipe yields approximately three dozen (36) standard muffins, making it ideal for freezing.

Spice Adjustment:

If you prefer a milder spice flavour, you may reduce the amount of cloves slightly.

Testing for Doneness:

Muffins are done when a toothpick inserted into the centre comes out clean.

Storage:

Cooled muffins can be stored in an airtight container at room temperature for up to 4 days, or frozen for up to 3 months.

Preheat and Prep: Preheat oven to 375 °F (190°C). Line muffin tins with paper liners.

Mix Wet Ingredients: Using a 5 qt bowl or larger, beat eggs slightly. Add sugar, oil and applesauce and beat together until well combined.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, cinnamon, nutmeg, cloves, baking powder, baking soda, and salt. Add the dry ingredients to the wet mixture and blend until smooth.

Add Ins: Stir in raisins.

Fill and Bake: Fill muffin papers ⅔ full and sprinkle white sugar on top. Bake for 15–20 minutes.

Cool: Remove from oven and cool on a wire rack.

6 large eggs

3 cups (600 g) white sugar

2 ¼ cup (530 ml) oil (vegetable or canola)

620 ml applesauce

4 ½ cups (675 g) all purpose flour

1 Tbsp cinnamon

1 ½ tsp nutmeg

¾ tsp cloves

3 tsp baking powder

3 tsp baking soda

1 ½ tsp salt

3 cups raisins.
