Searing the Beef

Substitutions: Swap maple syrup for agave or omit for a sharper dressing.
Serving: Ideal as a dip for crudités, drizzled over wedge salads, or spooned onto sandwiches.
Make-ahead: Keeps in an airtight container in the fridge up to 5 days.
Leftovers: Stir before serving, as the tofu may settle at the bottom.

In a medium bowl, whisk together mayonnaise, Dijon, garlic, tahini, both vinegars, lemon juice, maple syrup, nutritional yeast, onion powder, garlic powder, salt, and dill until creamy.

Crumble tofu with a fork, then fold into the dressing for a chunky texture.

Stir in parsley if using. Taste and adjust seasoning as needed.

Use immediately or chill until ready. Serve as a dip or dressing.

1 cup (240 g) vegan mayonnaise

1 Tbsp Dijon mustard

1 tsp crushed garlic

2 Tbsp tahini

1 Tbsp white vinegar

1 Tbsp apple cider vinegar (optional

for tang)

2 Tbsp lemon juice

1 Tbsp maple syrup

¼ cup (15 g) nutritional yeast

1 tsp onion powder

½ tsp garlic powder

1 tsp salt

½ tsp dried dill or tarragon

3 oz (85 g) extra firm tofu (crumbled)

1 Tbsp finely chopped parsley (optional)
