Searing the Beef
Substitute plant-based milk and butter for a dairy free version.
Use flax eggs or egg replacer for a vegan loaf.
For a nut free option, swap almond flour for oat flour or all purpose flour.
Store in an airtight container at room temperature up to 3 days, or freeze up to 2 months.

Preheat the oven to 350°F. Lightly spray a loaf pan with oil and line with parchment paper.

In a small bowl, add the cinnamon and sugar and mix

In a large mixing bowl, combine dry ingredients and mix.

In a separate bowl, mash bananas then add eggs, melted coconut oil, and vanilla paste and mix well. Add to large bowl and mix.

Pour a ⅓ of the batter to the loaf tin. Sprinkle cinnamon sugar mixture evenly. Top with remaining ⅔ batter. Top with remaining cinnamon and sugar.

Bake for 20 minutes. Remove from oven and quickly add topping and sliced bananas and replace back in oven for a further 30 minutes. Check after 25 minutes.

Once a skewer comes out clean, remove from the oven.

Allow the bread to cool in the pan completely, before slicing and serving.

2 cups almond flour
1 tsp baking powder
2 tbsp brown sugar
½ tsp salt
2 large bananas mashed plus 1 banana sliced (optional for topping)
2 large eggs
¼ cup coconut oil melted
2 tbsp milk
1 tsp vanilla paste

1 tbsp cinnamon
¼ cup granulated sugar
Filling
¼ cup flour (gluten free if needed)
2 tbsp butter melted
2 tbsp brown sugar
2 tbsp granulated sugar
2 tsp ground cinnamon
sliced banana optional
