Batter Thickness:

This batter is naturally thick, which helps keep the chocolate chips suspended.

Dairy Free Option:

The recipe works excellently with oat milk and non dairy melted butter, making it easy to adapt for dairy sensitivities.

Don't Overmix:

Mixing the batter too much will develop the gluten and result in tougher, less tender muffins.

A toothpick inserted into the centre of a muffin should come out with moist crumbs attached, but not raw batter.

Preheat and Prep: Preheat oven to 350 °F (175 °C). Grease or parchment line your muffin trays.

Combine Dry Ingredients: In a large bowl, mix the flour, salt, sugar, baking powder, and cocoa together.

Combine Wet Ingredients: In a separate bowl, whisk the vanilla, milk, melted butter, and eggs until smooth.

Mix Batter: Combine the dry ingredients with the wet ingredients and stir until just mixed. Do not overmix; a few lumps are fine. Fold in the mini chocolate chips.

Fill and Bake: Using an ice cream scoop (this is a thicker batter), spoon the mixture into the prepared muffin trays. Bake for 15–20 minutes. (Note: Mine tend to take 18 minutes).

Cool: Remove the muffins from the oven and let them sit in the tray for another 5 minutes before transferring to a wire rack to cool completely.

240 grams (1 7/8 cups) all purpose flour

60 grams (½ cup) cocoa

1 ½ teaspoons salt

2 teaspoons baking powder

200 grams (1 cup) sugar

250 ml milk (I use oat milk)

2 tsp vanilla extract

90 ml melted butter (I use non dairy)

2 large eggs

¼ cup mini chocolate chips
