Searing the Beef
Using mostly granulated sugar keeps these bars light, while a small amount of brown sugar adds depth.
These taste even better the next day once the spices settle.
Try sprinkling extra chocolate chips on top before baking for a decorative finish.

Preheat oven to 350°F (175°C). Grease and line a 9x13-inch pan with parchment, leaving enough overhang to lift the bars out later.

In a medium bowl, sift together the flour, pumpkin pie spice, baking soda, and salt. Set aside.

In a stand mixer with the paddle attachment, beat the butter and both sugars together until light and fluffy, about 2 minutes.

Add the eggs one at a time, beating well after each addition. Stir in the pumpkin puree and vanilla until smooth.

With the mixer on low, add the dry ingredients in two additions, mixing just until combined. Avoid overmixing.

Fold in the chocolate chips by hand. Spread the batter evenly in the prepared pan, smoothing the top with a spatula.

Bake for 35–40 minutes, or until a toothpick inserted in the centre comes out with only a few moist crumbs.

Cool completely in the pan before lifting out and slicing into neat squares.

2 tablespoons pumpkin pie spice
1 ½ teaspoons baking soda
¾ teaspoon salt
1 cup (225 g) unsalted butter (room temperature)
1 ¼ cups (250 g) granulated sugar
½ cup (100 g) light brown sugar (packed)
2 large eggs
1 ½ cups (375 g) pumpkin puree
2 teaspoons pure vanilla extract
1 ¼ cups (210 g) dark chocolate chips
