Searing the Beef

Cooking time may vary depending on microwave wattage.
Use dairy free milk and chocolate chips to keep it vegan.
Add a dusting of cocoa powder or extra chocolate chips on top before cooking.

In a medium bowl whisk together almond flour, coconut flour, cocoa powder, sugar, and baking powder until no lumps remain.

In a separate bowl whisk the egg with milk, then add to the dry mixture. Stir until smooth and glossy. Mix in peppermint extract.

Fold through chocolate chips as desired.

Lightly grease a microwave safe bowl or divide batter between two ramekins.

Microwave about 4 minutes if using one bowl, or 3 minutes if divided, until the muffin is set in the centre.

1 Tbsp almond flour

1 ½ Tbsp coconut flour

1 Tbsp cocoa powder

1 Tbsp granulated sugar

½ tsp baking powder

¼ tsp peppermint extract

1 large egg

¼ cup milk of choice

chocolate chips (to taste)
