Melting Chocolate:
Using chips for melting is convenient, but ensure they are stirred until completely smooth before incorporating them into the dough.

Store in an airtight container at room temperature for up to 5 days. These cookies also freeze very well, either as baked cookies or raw dough balls.

Preheat and Melt Chocolate: Preheat the oven to 320°F (160 °C). Place the 120 g of dark chocolate chips in a heatproof bowl over a saucepan of simmering water and stir until the chocolate is melted and smooth. Set aside.

Cream Butter and Sugar: Place the butter and sugar in the bowl of an electric mixer and beat for 8–10 minutes or until light and creamy. Add the egg and vanilla and beat for a further 3–4 minutes.

Mix Dough: Stir through the flour, cocoa, baking soda, and the melted chocolate. Add the remaining dark chocolate chips and stir to combine.

Roll and Bake: Roll tablespoons of the mixture into rounds and place on baking trays lined with non-stick baking paper, allowing room to spread. Flatten each round slightly. Bake for 10–12 minutes or until slight cracks have formed and cookies are just crispy. Cool on wire racks.

¾ cup (130 g) brown sugar
1 large egg
1 teaspoon vanilla extract
1 cup (150 g) plain all purpose flour (sifted)
¼ cup (25 g) cocoa (sifted)
1 teaspoon baking soda
280 g (∼1 ¾ cups) dark chocolate chips (for mixing)
