Searing the Beef

Gluten-free option: Use tamari or coconut aminos in place of soy sauce.
Storage: Leftovers keep in the fridge for up to 3 days; the sauce will thicken and flavors deepen overnight.
Bean substitutions: If you’re not a fan of green beans, try:
Asparagus spears (added in the last 10–12 minutes of cooking for crisp-tender texture)
Broccoli florets (stirred in during the last 15 minutes)
Zucchini or yellow squash (added in the final 10 minutes to avoid mushiness)
Snow peas or sugar snap peas (tossed in at the very end for a fresh crunch)

Make sauce: In a bowl, whisk together soy sauce, honey, ketchup, garlic, basil, oregano, smoked paprika, red pepper flakes, black pepper, and rice vinegar.

Slow cook: Place chicken thighs, potatoes, and carrots in a 6-quart slow cooker. Pour sauce over. Cover and cook on low for 7–8 hours, or high for 3–4 hours, basting occasionally.

Add beans: Stir in green beans during the last 30 minutes of cooking so they stay tender-crisp.

Optional crisping: Preheat broiler. Transfer chicken (skin-side up) to a sheet pan and broil 3–4 minutes until golden and crisp.

8 bone-in skin-on chicken thighs

16 oz baby red potatoes (halved)

12 oz baby carrots

12 oz green beans (trimmed)

2 Tbsp fresh parsley (chopped)

½ cup honey

3 tablespoons ketchup (slightly reduced)

2 cloves garlic

minced

1 teaspoon dried basil

½ teaspoon dried oregano

½ teaspoon smoked paprika (new

adds depth)

¼ teaspoon crushed red pepper flakes

¼ teaspoon ground black pepper

1 teaspoon rice vinegar (new

for brightness)
